Easy Lemon Pancakes (VEGAN)

1.25 C of Flour (I used organic non bleached artisanal flour, use what you have)

1tsp of Salt (I eyed it)

1/2 C  or less of a preferred sweetener (I also eyed this)

Lemon Zest ( I used half a lemon-1 lemon, I squeezed the lemon into it as well, yes I abuse)

Combine ingredients above. I make the neat egg, then in a small pan warm up the following ingredients. I do this, because they incorporate better. I start heating up the gridle at this point. 

1 Flax egg (make this in a cup, I use neat egg)

1.5 C of Plant based milk (I prefer hemp)

2 Tbsp Vegan butter

Combine both liquids and solids and spoon onto griddle, cooking each side until bubbly then flip,
