Apple Pie Pancakes

I have a post for you today friends. What better way to return than with a post for “Pancake Sunday”.

I have been under the weather, a smooth way of saying Laryngitis. For those of you who may know me in real life, taking a round of antibiotics is something I’d do everything to prevent. I’m the one who usually reaches for a ton of tea, and garlic based ““oxymels” .  But I just couldn’t. I caved. Blame it on the fever, or body-aches, but this granola mom was getting her Z-pack, end of story. Fast forward 14 days later and here I am.

Getting sick is such a downer for me. It literally throws the proverbial wrench into my system. Hence the lack of interest in just about everything.  But here I am, crawling out of my trench. Showing up. Because all you have to do is keep showing up.

So much has happened…

  • The Boston Maraton was won by a normal everyday Nurse. 
  • Korea has agreed to disarm (both sides)

Let’s not forget.

and

  • My son hates my haircut

Ok enough joshing around, let’s get this party started.

Here’s the recipe for those Applepie Pancakes:


Prep time:  15
Total time: 30 mins
Serves: Family of 5 (little ones on deck)
Ingredients &
Do this first 

Make your flax egg here. Add  

  • 1 1/2 cup of plant based milk.

Your wet bowl is done. 

Start a different bowl for this

  • 1/2 cup of organic flour
  • 1/2 cup of stone ground wheat
  • 2 tbsp of baking powder
  • 3 tbsp of coconut sugar
  • 1 tbsp of hemp seeds

If you sift, sift now. Then combine with your wet bowl. 

Laddle your batter onto a griddle, and cook just a couple minutes on each side. The trick here is to make sure you have a nice evenly hot griddle. Hot enough to make spongy pancakes, but not too hot it burns before it evenly cooks. You will end up with thin af pancakes should said griddle not be hot enough. Good luck!

Simultaneously, you can make your applepie compote.

  • 2 granny smith apples peeled, cored and cubed
  • 1 tbsp of smart balance butter
  • 1 tsp of cocosugar
  • Shakes of cinnamon

Saute in pan, till tender. 

Serve liberally atop a pile of your fresh pancakes y viola – killing that apple pie craving at breakfast. Pancakes are life.

 

 

 

 

 

 

 

 

I Can’t Believe It’s Not a Cookie, Vegan Oatmeal Cookie. 

These are a delicious earthy biscuit of a cookie. This isn’t considered your classic Nabisco knock off. The are still soft, but have a nice chunkiness to them. I made them specifically for nicecream sandwiches!

If you’re interested in taking up a snack, thats more like a breakfast or a meal packed with protein this is your cooking.

Vegan egg here. In this case I had the “Neat Egg” but you can do your single flax egg if you wish. 1:2 Ratio  of Flax and water and set aside.

In the food processor blend 
2 Cup rolled oats

I transfer this to a bowl once done and include the following 
1 1/2 C of whole wheat flour
1/2 tsp of baking powder
1/2 tsp of salt or less depending on preference
In the food processor blend the dates first until it’s nice and pulpy. 
1 Cup of medjool dates (use more or less depending on your preference)
Then add the following.
1 Cup of vegan butter
1 Tsp of vanilla or more (whose counting)

With your hands, combining both groups working into a nice “masa” (dough)
Roll them into small golf ball sizes. On a lined sheet place each down, and squash the into thin “pancakes” . I bake one side for 7 mins or until golden brown, then flip them and bake for an additional 7 mins. I do this because I like the crispy both sides.  
No photo, but you get the idea. You’ll be eating “Not Oatmeal Cookies” for days!

Easy Lemon Pancakes (VEGAN)

1.25 C of Flour (I used organic non bleached artisanal flour, use what you have)

1tsp of Salt (I eyed it)

1/2 C  or less of a preferred sweetener (I also eyed this)

Lemon Zest ( I used half a lemon-1 lemon, I squeezed the lemon into it as well, yes I abuse)

Combine ingredients above. I make the neat egg, then in a small pan warm up the following ingredients. I do this, because they incorporate better. I start heating up the gridle at this point. 

1 Flax egg (make this in a cup, I use neat egg)

1.5 C of Plant based milk (I prefer hemp)

2 Tbsp Vegan butter

Combine both liquids and solids and spoon onto griddle, cooking each side until bubbly then flip,
