Pinkberry Nice Cream

Ok, so there is no such thing as Pinkberries.

But there should be according to this recipe.

I won’t comment much on the last 72 hours of my life, let alone the last year but I will serve you up a nice cool treat you can enjoy in this heat. (Sorry if you’re in another part of the world that is currently enjoying winter, don’t mind me; keep enjoying).

So what have I been doing for the past year?

Working, traveling, breaking immigration laws, mothering. All the fun stuff. Life isn’t as  easy as March 2018, but it’s still adventurous and there is still value in the complications. Lucky for me, I can fall back on Nice Cream to temporarily soothe my aches and pains.

Here goes:

3-4 Small frozen organic bananas

1-2 hand fulls of frozen organic blueberries

Blend all of that in your hand dandy food processor

Toppings you could choose:

  • ground flax
  • muesli
  • dates

Or do use whatever you have… more importantly just improvise, and just enjoy yourself.

Above all consider the following:

That Ben & Jerry’s ice cream contains 19 g of fat in a single half-cup serving, and 10 g of that is saturated (the “bad” kind, which raises our levels of LDL cholesterol). The American Heart Association recommends we limit our fat levels and cut back on saturated fat, making sure it doesn’t exceed more than 5 to 6 percent of our total calories—that’s about 16 g of saturated fat daily for someone on a 2,000-calorie diet. So one serving of our chosen sample exceeds that total.”

Choose cruelty free, nutrient dense nice cream next time.

Nice Cream

This isn’t my recipe. I learned it last year, but it sure is a favorite of my families.  I’m passing it on to you incase you don’t already know. Treasure it, because it can enhance many family nights at home.

3-5 Frozen bananas ( I never can have enough)

1/2 C of you choice plant based milk ( we prefer hemp)

This is your base, everything else is extra

Put your bananas in the food processor and pulse, add little amounts of milk until it loosens up and you have a nice creamy blend going. Be careful not to pour in too much, otherwise you’ll end up with a shake instead of nice-cream.

Being extra -You can include cinnamon, vanilla, cacao powder, or any other types of nutritional powders you use. You can also include other fruits like papaya or strawberries to change the flavor.

I usually serve this right away as soft serve, because it’s so hot in Panama. But if I want to surprise the kids, I store in some tupperware and freeze it for a few hours, so it firms up to scoop out.
